A Beach Bash With Bite

Summer at The Barclay at SouthPark came with a tropical twist. Every year, residents gather for a beach themed bash, but this year’s party really turned up the heat.

Culinary Director Adam roasted a whole mojo marinated pig on the terrace, while a raw bar featured crab legs and claws. The feast continued with Cuban sandwiches, conch fritters, red rice and beans, Caribbean poached shrimp, Jamaican jerk chicken and pan seared snapper with curried coconut sauce.

Island music kept the party moving, and residents filled the dance floor for line dancing, shagging and plenty of good times.

The beach bash is one of several large, themed parties held throughout the year at The Barclay. Next up was the annual Casino Night, a charitable event that brought another evening of food, fun and dancing to the community.
